Mmm… Lasagna. But wait, it’s healthy too! A little zucchini is included. And, of course, my favorite part: three kinds of cheese. Add a tossed salad on the side and you are good to go! A Healthy Lasagna Dinner – Mangiare!

Ingredients
- 1 small onion (chopped)
- 1 tbsp. oil
- 1 lb. ground beef
- 1 garlic clove (minced)
- ½ tsp. basil
- ½ tsp. oregano
- 1 tsp. salt
- 2 cups (16 ounces) tomatoes
- 6 ounces tomato paste
- 1 cup beef bouillon in water
- 3-4 medium-large zucchini
- 8 sheets lasagna noodles
- ¼ cup dry bread crumbs
- ½ cup Parmesan cheese
- 1 cup shredded mozzarella
- 1 cup ricotta cheese
Instructions
- Cook onion in oil; add meat and brown.
- Mix in all seasonings, tomatoes, paste and stock. Simmer until thick (about 1 hour).
- Boil lasagna noodles until al dente.
- Steam unpeeled zucchini in small amount of water (5-7 minutes); rinse in cold water. Slice thinly lengthwise.
- Sprinkle 2 tbsp. crumbs into shallow, well-oiled baking pan. Arrange ½ of zucchini in pan. Add 4 lasagna noodles on top of the zucchini. Top with ½ sauce, ½ mozzarella and all ricotta. Sprinkle with remaining crumbs, then layer remaining zucchini, noodles, sauce and mozzarella. Top with Parmesan cheese.
- Bake at 350 degrees for 45-55 minutes.
- Let stand for a few minutes to thicken.
