Healthy Lasagna Dinner

Mmm… Lasagna. But wait, it’s healthy too! A little zucchini is included. And, of course, my favorite part: three kinds of cheese. Add a tossed salad on the side and you are good to go! A Healthy Lasagna Dinner – Mangiare!

Healthy Lasagna

Ingredients
  1. 1 small onion (chopped)
  2. 1 tbsp. oil
  3. 1 lb. ground beef
  4. 1 garlic clove (minced)
  5. ½ tsp. basil
  6. ½ tsp. oregano
  7. 1 tsp. salt
  8. 2 cups (16 ounces) tomatoes
  9. 6 ounces tomato paste
  10. 1 cup beef bouillon in water
  11. 3-4 medium-large zucchini
  12. 8 sheets lasagna noodles
  13. ¼ cup dry bread crumbs
  14. ½ cup Parmesan cheese
  15. 1 cup shredded mozzarella
  16. 1 cup ricotta cheese
Instructions
  1. Cook onion in oil; add meat and brown.
  2. Mix in all seasonings, tomatoes, paste and stock. Simmer until thick (about 1 hour).
  3. Boil lasagna noodles until al dente.
  4. Steam unpeeled zucchini in small amount of water (5-7 minutes); rinse in cold water. Slice thinly lengthwise.
  5. Sprinkle 2 tbsp. crumbs into shallow, well-oiled baking pan. Arrange ½ of zucchini in pan. Add 4 lasagna noodles on top of the zucchini. Top with ½ sauce, ½ mozzarella and all ricotta. Sprinkle with remaining crumbs, then layer remaining zucchini, noodles, sauce and mozzarella. Top with Parmesan cheese.
  6. Bake at 350 degrees for 45-55 minutes.
  7. Let stand for a few minutes to thicken.
