Crock Pot Loaded Potato Soup Dinner

So it is a weeknight, the air is crisp and you are…exhausted.  Jackie Brown from Mom on a Mission has a simple, yet hearty dinner for you and your family.  Her Crock Pot Loaded Potato Soup can be prepped in advance and waiting for you at the end of a long day.  It is all over, but the mashing…of the potatoes.  Add some bacon, green onions, or chives to taste and, of course, more cheese!  Toss a quick salad and enjoy!

Crock Pot Loaded Potato Soup

Ingredients
  1. 4 pounds potatoes, peeled, and chunked
  2. 1 small onion, chopped
  3. 2 (14 oz) can chicken broth or 1 carton
  4. 2 teaspoons kosher salt
  5. 1/2 teaspoon pepper
  6. 1 (12 oz.) can evaporated milk {do not add if freezing first, save for the last cooking hour}
  7. 1 cup sharp shredded cheese, optional
Instructions
  1. Dump the first five ingredients in to the crock pot. Cook on low for 7-8 hours or until potatoes are tender.
  2. Mash potatoes with a potato masher or back of a spoon during the last cooking hour.
  3. Stir in milk and 1 cup shredded cheddar cheese if desired.
  4. Top with additional cheese, cooked bacon, sliced green onions or chives if desired.
